Super Clean Quinoa

Read on for Katherine's recipe for a simple, fresh and healthy quinoa that will have you thinking springtime even in the coldest weather!

Super Clean Quinoa

For the salad:

  • 4 cups cooked quinoa (any kind you like)
  • 2 cups fresh baby spinach
  • 1 cup chopped tomato (1 large)
  • 1 cup chopped mini cucumber
  • 1/2 cup chopped fresh basil
  • 1/8 cup chopped fresh mint
  • 1/4 cup thinly sliced red onion (or more, if you're into onions)
  • salt and pepper to taste

For the dressing:

  • 1 1/2 TBS fresh lemon juice
  • 2 TBS olive oil
  • salt and pepper
  • *Add chopped chicken and feta, or flaked salmon filet for even more protein and some healthy fat
